Let me start by saying that one of my simple pleasures is making dinner with little to nothing in my fridge. It’s a weird sort of challenge I have with myself that often happens on a Sunday because I try to do the bulk of my grocery shopping on Mondays and by Sunday, well, it’s slim pickins around here. This week, I had two small heads of cauliflower in my fridge that were begging to be roasted. I turned to one of my favorite cookbooks, Small Plates and Sweet Treats by Aran Goyoaga. {Which by the way, is going to be part of my VERY exciting Favorite Things Giveaway this Holiday season!! I love this recipe. It makes enough for my family with leftovers for mom’s lunch the next day. Add a little side salad and you are set. This recipe is gluten-free as are all the recipes in her book that I have grown to love over the past year while eliminating gluten as much as possible. I hope you enjoy this warming wintery soup as much as I do!
