It’s no secret that my family loves a good muffin. In the early days, I’d make any muffin simply to get my kids to eat something. Later, the secret started where I’d add veggies in there once they were hooked, to get them eating their vitamins when they were opposed to anything that wasn’t beige. Now that they are older, the secret is out, mom adds all kids of vitamin power to just about everything. I make muffins every few weeks around here for a healthier sweet treat or for a change it up in our breakfast routine. Zucchini + carrot muffins are a regular favorite as are Apple muffins.
Looking through my cookbooks for a new recipe I came across Gweneth Paltrow’s recipe for Apple Spice muffins and my idea was born. Why not try combining all our favorites in one muffins, The Everything Muffin. It’s basically a gluten-free version of the apple spice muffin using millet flour inspired by the apple muffins I made last fall, combined with my zucchini + carrot muffin. So many delicious flavors with a powerful vitamin punch any mom can feel good about serving any time.

I made these tonight with the addition of 1/4 cup melted peanut butter and a handful of white chocolate chips. I skipped the topping and just sprinkled a little cinnamon and sugar on top. Whooooo-doggy! My house smells incredible! Very glad I doubled the recipe as these are going to go fast. Love the health of pumpkin and oats as I was looking for a hearty, stick with you muffin
