I was feeling in the mood for a homemade treat when my kids got home from school the other day, but was feeling out of ideas. I had a pantry full of basic dried goods and several too ripe bananas. I knew I’d pinned something recently with bananas for an after school snack idea. So I grabbed my phone and with just a couple of swipes I had it, Sarah Yates’ recipe for Gluten-Free Chocolate Chip Banana Bread. Bingo. All ingredients were in my pantry, bananas were calling my name, and all the while I could hear my kids saying “thanks mom, you’re the best!” (It’s totally what I live for.)
A little confession, I am kinda a freak about being an ultra-neat cook/baker. I get all my ingredients out and ready before starting. As I use an ingredient, I put it away immediately. Is that weird? It makes me feel like the clean up is so much less daunting.
