Menu Inspiration
This week’s menu inspiration comes from some new recipes and lots of citrus. I was feeling a little uninspired with my dinner routine around here. I spent a few minutes browsing some favorite pinners and boards to find a couple of new recipes to work from. I have to admit that I’m not very good at following recipes. I made each of these quickly and loosely based on each of these recipes and they were all delicious! As is typical around here, some kids ate some of each of these dinners and never an all for one, but that’s normal. It’s hard to please everyone. And hey, they can always eat tomorrow. Simple Proof.
Sunday (not on menu board) – Salmon with Cucumber Clementine Salsa – I pan seared the salmon and finished it in the oven and topped it with a version of this salsa. I used grapefruit, clementines, and a tangerine in the salsa.
Lemon Chicken – I have made this recipe no fewer than 100 times! It is perfect every time. The leftovers make for amazing salads or sandwiches the next day.
Lamb Skewers – I am loving the Williams-Sonoma blog, Taste as a great resource for easy weeknight meals and more special occasions as well.
Halibut Papillote – Actually turned into Salmon Papillote because that’s what the fish monger had available. This recipe was devoured by my husband and I, but the kids only liked the salmon and quinoa.
Pasta Carbonara – This is from one of the most well written blogs I know. Her recipes are amazing too!
Pomegranate Steak – From Food 52 contributor, Phyllis Grant, who also writes the aforementioned blog above, Dash and Bella.
It’s possible we consumed a month’s recommended dosage of kale this week as I’ve been obsessed with combining every possible citrus with kale for incredible salads every night. The trick is to make AND dress the salad before preparing anything else. This method allows the kale to soften and absorb the delicious citrus dressing aptly.
