This week is all about comfort food.  Easy for mom to prep and favorites I know my kids will eat (or at least have been known to eat!)  Nothing fancy, just comforting, healthful family meals I hope your family will enjoy as well.

Monday – You will notice that fish is typically on the menu for Mondays.  It’s when I do my shopping (ahem, groceries are delivered!) and the fish is fresh from the monger.  This pan-sear finish-in-the-oven recipe is delicious and my kids love the crispy top on it.  The secret is to heat the pan completely dry for 4-5 minutes to get it smokin’ hot.  I served it with quinoa salad which can be made with just about any veggies or fruit you have on hand with a dressing as simple as olive oil, lemon, s+p.

Tuesday – Steak and potatoes.  yes, again!  The kids love it and it’s simple simple. I’ve linked these two recipes to help you get started with grilling steaks perfectly every time.  One is the simplest way to prepare them that works best with a nice thick rib-eye and the other has a basic herb marinade that is a good back pocket recipe to know.

Wednesday – I make a version of this baked chicken parmesan recipe regularly.  I like to serve it on a bed of greens for me or over spaghetti for everyone else.  It is so simple. One of these days I’ll get around to posting my recipe.  Serve it with a side of broccolini quick blanched and sautéed in olive oil and garlic, you have the simplest side dish ever.

ThursdayPork chops are an affordable substitute for steak that my kids enjoy.  They are delicious simply grilled with olive oil, s+p.  Fruit is a perfect side for prok.  Think about the old Brady Bunch, “pork chops and apple sauce!”  Fruit goes perfectly.  Whether it’s apples or cranberries in the fall or nectarines in the summer, it just works.  I served it with a pineapple, cucumber, avocado salsa similar to this pineapple salsa.

Friday – Is it just my family or could your family eat breakfast for every meal of the day!?!  From a simple omelette to french toast, they can’t seem to get enough.  One favorite is Eggs in the Hole.
