I’ve been making my way through the gorgeous new cookbook Yummy Supperby Erin Scott. If I didn’t convince you to take a look at it before, you may want to now. I mean how could you not be inspired by the cover shot of these gorgeous and oh so simple fish tacos. What I’ve been enjoying most about Erin’s cookbook is that she cooks like I do. No recipe is overly complicated and all ingredients are in season and found locally. I love the use of pomegranate seeds in these fish tacos, so fresh and perfect for fall. Of course I also adore knowing that she is a local mom too. So, in honor of Taco Tuesday I hope this inspires you for dinner tonight!
