Making birthday cakes for my family is something I’ve always done.  It’s the one truly homemade part of a party I put all my love into.  My 9 year was thinking he’d prefer a Baskin Robbins ice cream cake this year and it made me so sad.  I’m sure you are thinking that I’m crazy and should definitely take the pass on this one, but it’s just a thing I have.  No one has a scrapbook, but they all get a birthday cake made with a whole lotta momma love.  Each year, they’ve each had mom’s homemade cake!  This week I made my husband his favorite cake for his birthday  – a carrot cake.  I was inspired by a recipe from Sweetened with Honey.  This is one fab carrot cake recipe!  It is the perfect full fat recipe that makes a birthday cake special.

Baking can be a messy venture in the kitchen.  I actually dread the idea of cleaning gooey pastey flour from counters.  I try to be an organized baker.  Since baking is very precise, it works well.

The key to baking for me is to get all of my ingredients ready first. Then I put things away as I use them so it doesn’t pile up on me.  I have a limited workspace so this strategy also helps me keep it clean and clear of clutter.

This cake had 3 cups of carrots in it!  There’s no mistaking it for anything but a carrot cake, that’s for sure.

The recipe is for a 3 layer cake.  Here’s the first layer with the middle frosting.  The first 2 layers are face up.  The final, face down.

The crumb coating.  I didn’t even know what this was before I made my daughter’s cake this summer.  Thankfully I read up on this, it makes frosting a cake so much easier and prettier.

Here’s the final final.  It was so tall, creamy and delicious.  Thank you Sweetened with Honey.  It was worth the effort.  My family enjoyed eating it almost as much as I enjoyed making it!
