Chicken Escabeche with Cilantro Black Beans

Do you ever get tired of chicken?  I do.  There must be a million ways to make it, but I seem to hover around the same ones.  Since deciding to change my diet up a few months ago, eliminating gluten and dairy, I’ve noticed how often chicken recipes and sauces include those items.  I was thrilled to find this fabulously yummy chicken dish not long ago.  So glad I finally got around to trying it.  A new favorite in my chicken repertoire for sure!

The recipe is a Rick Bayless recipe found on myrecipes.com.  It is a delicious low calorie meal high in fiber and protein.  It is gluten free, dairy free and sugar free.  Easy to follow and loved by most of my family.  If 4 out of 5 like it, I consider that a success!

The best part about this meal was that I had pretty much every ingredient already in my kitchen.  You might too. I made a couple minor adjustments, apologies to the chef, but I had to work with what was on hand – keeping it simple.  I substituted the white vinegar for apple cider vinegar (on an apple cider kick lately) and the pickled jalapeños for 1/2 of a fresh jalapeño seeded and finely diced.  You could use canned green chiles if you don’t have a fresh.  I also added more broth than what the recipe calls for and served it over brown rice to please my crowd.

Super deelish.  Super healthy.  Super simple.
