Date Power Balls

a bowl full of simple

This name does not give these yummy little treats their due.  You all know I’ve been kickin’ the sugar addiction for the past month or so.  First as part of the New Year New Rules nurtitional guidelines and continuing on my own as a way to better health.  I’ve even been able to show my kids that sweets and treats don’t have to be junk. Dates are the perfect natural sweetener for those that crave chocolate as their go to choice for sweets.

This recipe was created by the team at Prescribe Nutrition.  I think you will be pleasantly surprised at the yumminess you find in these little nuggets.  I keep a stash in my fridge or freezer to have on hand as an after dinner treat if I’m having a particularly strong craving.

Date Power Balls
16 medjool dates, pitted
1/3 c. walnuts
2 tbsp unsweetened cocoa powder
2 tbsp coconut butter (I substituted almond butter)
1/2 tsp cinnamon
pinch of sea salt
1 tbsp water
2 tbsp unsweetened shredded coconut for coating (optional)
Place everything in a food processor and pulse until dates are chopped up.  The consistency should resemble cookie dough.  Spoon out about 1 teaspoon (i like to use small ice cream scoopers) and roll into balls.  Put the shredded coconut into a shallow bowl and roll the balls in the coconut to coat (optional).

I can’t wait to see what Megan and Katie are up to next with Prescribe Nutrition.  With so much fantastic feedback they have decided to take New Year New Rules to the next level.  Up next, New Rules, Nutrition for Life.  If you are interested in joining them for 10 days that just may change your life, the next session starts April 8th.
