Our Meal Plan This Week

Heard from so many recently for some more menu ideas.  Here’s our plan for the week.  I spent a little time on Sunday afternoon putting a menu together and shopping for the week.  I have more time on Sunday afternoon and Mondays than the rest of our week to get some of the prep done to make weekday madness at dinner time go a little more smoothly.

On Sunday after the market trip, I chopped some raw veggies to have on hand for lunches or pre-dinner munchies.  I put together the granola bars, which were so simple.  I made the quinoa for the quinoa + butternut squash salad while roasting the pre-cut butternut squash.  This salad will be great to have for dinner and leftovers will last me for lunch during the week.  For Sunday dinner, I threw some Bell and Evans chicken into the oven.  Bell and Evans is a great item to have in your freezer.  It’s all organic, antibiotic-free chicken.  They come in a variety or sizes and flavors.  They are perfect for those kids that like chicken nuggets, but whose parents want something more natural.  I often toss a prepared roast chicken in my basket for the same purpose.  By the end of dinner time, I had Sunday Dinner done, lunch for me through the week, and a yummy lunchtime/snacktime treat ready too.

On Monday afternoon I had time while the big kids had their instrument lessons to make the broccoli soup and roast some chicken to use on Thursday. I also had some leftover quinoa and a recipe for quinoa patties that I’d been wanting to try.  Instead of grilled cheese with my soup, I had quinoa + kale patties.  They were such a healthful alternative to my family’s beloved grilled cheese.

Because of our busy afternoons Tuesday + Wednesday need to be easy dinner nights.  B.L.T.s and Baked Potatoes in the slow cooker.  Thursday we took Lemon Chicken Orzo Soup on our ski trip to Tahoe.  I love to have a meal already made for when we arrive.  Friday I’m off duty for a late Family Valentine’s Day Dinner Date.
